It’s a vegan and paleo-friendly cookie mix!
You can make it yourself – or you can layer the ingredients in a mason jar for a fun and festive holiday gift.
I mean, who doesn’t love cookies?
Especially when they taste amazing AND they also happen to be healthier than your average chocolate chip cookies.
They’re gluten-free, lower in sugar and carbs, and higher in fiber than traditional cookies! Plus, depending on your ingredients, they also can fit into a Whole30/Paleo/Vegan lifestyle.
Leave it up to Angie to find something else to put in a mason jar! When you give these cookies as a “cookies in a jar” gift, they require absolutely no baking on your part. Just layer the dry ingredients in a mason jar, securely cover the jar, add a “how to bake” gift tag and a ribbon and voila! You’re done!
You can give these as a teacher gift, stocking stuffer, or a fun present for anyone who enjoys a healthy and sweet treat.
Chocolate Chip Cookies in a Jar (Paleo/Vegan)
(makes 20 cookies)
- 2½ cups (240g) almond meal
- 3 tbsp (22g) coconut flour
- ½ tsp (2g) baking soda
- ⅔ cup (66g) coconut sugar
- ½ tsp(4g) sea salt
- 1 cup (175g) dark chocolate chips
Layer ingredients in a one-quart (one-liter) mason jar. Seal the jar.
Add a gift card with the following baking instructions:
Preheat oven to 350ºF (175ºC) and line a baking sheet with parchment paper or use a non-stick baking sheet.
Place the jar contents into a large mixing bowl, and add:
6 tbsp (85g) melted butter or coconut oil
¼ cup (60ml) water (or your fave dairy-free milk)
Mix well. Scoop the batter out of the bowl by tablespoon and drop each ball onto the baking sheet. Gently flatten, and then bake for 12-15 minutes until the edges begin to turn golden brown. Let cool on baking sheet.
